Why this goes differently
A professional range is not a big domestic one
It is a different machine with different failure modes, and most of the calls that end in a replacement quote elsewhere end here in a part number. The four things below are what actually separates the two outcomes.

The fault gets reproduced before it gets diagnosed
A burner that misbehaves once a day does not misbehave to order. The stored fault history comes off the control first, then we try to make the appliance do it again from cold — because a fault that only appears on a warm start is a different fault from one that appears every time.

Gas work is measured, not eyeballed
Flame appearance tells you something is wrong. Manometer readings at the regulator and at the burner tell you what. Supply pressure, orifice condition and shutter setting are read as numbers, which is the only way to separate a starved burner from a failed one.

Getting it out is part of the job
Most of this equipment went in before the counters were finished. Anti-tip brackets, gas connectors, undercabinet clearance and floor protection are planned before anything moves, so the appliance comes out and goes back without marking the kitchen it lives in.

- The oven heats, but nothing bakes the way it used to. Is it worth a visit?
- Yes, and it is usually cheap to put right. An oven that runs cool by twenty degrees or swings wildly around the setpoint is a sensor, a calibration or a door that no longer seals — not a failing oven. The reading is taken at the rack with a probe rather than from the display, because the display is reporting what the control believes, which is the thing in question.
- Do you work on the refrigeration side as well as the cooking side?
- Yes. Built-in and freestanding refrigerators, evaporator and defrost faults, thermistors, door seals and sealed-system work are all part of the same call. Sealed-system work is done under EPA Section 608 certification; it is not something to hand to a general handyman.
- My building wants a certificate of insurance before anyone comes up.

- Usually repairing, and the arithmetic is not close. These are heavy, serviceable machines built around parts that are still made — burners, valves, igniters, thermostats and hinges are all replaceable items. A replacement is not just the appliance either: it is the gas connection, the anti-tip, and frequently the cabinetry around an opening that was cut to the old dimensions. When a machine genuinely has stopped being worth it, we say so instead.
